Heirloom Tomato Vinaigrette

Heirloom Tomato Vinaigrette

A light, healthy dressing that dresses up any salad or veggie dish. Also serves as a fabulous merinade for any type of meat or tofu. 


2 shallots, minced

1 tsp. Dijon mustard

1 clove garlic, minced

2 oz. sherry vinegar

2 oz. olive oil

1 tsp. organic cane or palm sugar

1 (16 oz.) Organic Blended Heirloom Tomatoes Recommended: Yellow Roman

Sea salt & fresh cracked black pepper

Whisk all of the ingredients together in a bowl, check for seasoning. Toss with salad greens of your choice. Store in the refrigerator for up to two weeks.
